Why it made the list: Central-Texas barbecue is a Austin obsession, and the star is brisket, smoked low and slow over post oak until the bark is black and the fat renders to butter. Franklin Barbecue is the world-famous name (and legendary line); la Barbecue, Interstellar and LeRoy and Lewis are Michelin-recognized and far easier to get into.

Best for: Lunch, barbecue sells out
The vibe: Smoky, primal, worth the wait
Order this: Fatty (moist) brisket by the pound, plus ribs and sausage; white bread, pickles and onions on the side.
Insider tip: Franklin's line is hours long, go to la Barbecue, Interstellar or LeRoy and Lewis for equally great brisket with far less waiting. Get there before noon; the best joints sell out and close when the meat's gone.
